Did you know that harvesting grapes at night is one of the best ways to keep your machines running without the risk of breaking down? In the summer heat, machine engines can have a hard time keeping up with the high temperatures and are prone to overheating.

Lower temps mean more control over sugar levels and therefore the fermentation process. For better acid levels, harvesting grapes at night is ideal!
